I’m so happy to finally see spring and summer fruit coming into season! I’m taking advantage of the seasonal variety of produce by coming up with different ways to eat my fruits and veggies. This time, I wanted to add some sweet and juicy blood oranges to my greens. I ended up with a delicious salad!
Blood Orange & Kale Salad:
- 2 cups chopped kale
- 1/2 avocado, sliced
- 1 blood orange, sliced
- Goat Cheese or Feta Cheese, to taste
- 1 tablespoon olive oil (or to taste) for dressing
Directions: toss all the ingredients together and enjoy!
