My family loves getting together to eat out! There aren’t too many great places to eat where I live, so when my family gets bored of the same old Thai food, we venture to P.F. Chang’s.

I want to try the Crispy Korean Chicken wings and the Harvest Vegetable Quinoa “Fried Rice” ASAP!!! And I wouldn’t mind washing it down with an Apple Cinnamon Martini ;)

In honor of P.F. Chang’s contest and new Fall Seasonal Menu, they have asked me to use a few seasonal ingredients and show you all a recipe! Here is my Apple, Kale + Quinoa Salad!
- 1/4 cup (uncooked) Red quinoa
- 1 Green Apple
- 1/2 cup Corn
- 1/4 bunch of Kale
- 1/2 cup Spinach
- 3-4 Shiitake mushrooms
- 1/2 lemon
- Balsamic Dressing
- 3/4 cup olive oil
- 1/4 balsamic vinegar
- Salt (varies to your taste)
- Pepper (varies to your taste)
- Cook the quinoa. Pretty simple.
- Fry the shiitake mushrooms and cut them into slices. This will add an Asian-inspired flavor to the salad. If you don’t like shiitake mushrooms, walnuts are a good replacement since they give the salad more texture.
- Slice the green apple. Then cover with lemon juice to keep the apple from browning
- Throw all the ingredients into a mixing bowl and add the balsamic dressing.
That’s it! An easy salad that uses superfood kale. I definitely think that next time I’ll use walnuts instead of the shiitake mushrooms. Maybe throw in some strawberries or pomegranate seeds to give it a sweet kick. Yum!
